Vegan crackers with lentils

Vegan crackers a lovely choice, high in fibre a real bouquet of nutrients, these vegan crackers are prepared with clean healthy products. One of the main ingredients I choose was lentils, because of the richness in flavour, texture and the nutritional benefits..  top with your choice of herbs and spices!

Vegan crackers with lentils

A healthy, vegan low calorie, high fibre snack


  • 2/3 cup of green lentils (soaked overnight)
  • 1/3 cup melted coconut oil
  • 1 mug whole flour (rye,spelt,buckwheat)
  • 1 tsp salt of choice
  • 2 TBSP of ground flax seeds
  • 1/2 tsp baking soda
  • 1/2 TBSP baking powder
  • 2-3 TBSP of lemon juice
  • 1 tsp caraway
  • 1 tsp savory
  • chilli flakes, seeds and herbs for decoration


  1. Boil the lentils for 30-40 min (until soft) drain it well
  2. In a high speed blender, mix together the lentils and coconut oil until smooth purée (add a touch of water of its too thick)
  3. Pre heat the oven to 160°c
  4. Line a baking tray with parchment paper
  5. In a cup mix the soda with the lemon juice
  6. In a bowl mix together the flour, baking powder, salt, ground flax seeds and all the herbs and spices
  7. Little by little add the lentil purée and the soda mixture and form a soft dough. Add more flour if required (it has to be non sticky and soft)
  8. Roll it into 1 cm thick slab. If its sticky dust some flour on your surface
  9. Use your favourite cookie cutter and form the crackers (use a spatula or kitchen scrapper to help move them on to the baking tray
  10. Top with seeds, extra herbs and spices and bake for 15-20 min until crisp top
  11. Leave to cool then transfer them to a suitable dish for serving
