Oatmeal bake with tangerines, pistachios & figs

This oatmeal bake has a fine exotic flavor and texture along with no added sugar. I chose to add the topping at the end in order to keep the thermal use to a minimum as the ingredients are raw and we want to retain the beautiful benefits of raw chocolate and raw pistachios.

A great infusion of tender flavors, nutrients and fibers with the natural sweetness of spices and fruits. Its hard to define this meal because its suitable as a dessert and equally great as a snack.. even for breakfast. I’m leaving the decision up to you..

Oatmeal bake with tangerines, pistachios & figs

An exotic blend of naturally sweet flavors.

Ingredients

  • 3 cups of oats
  • 2 cups of freshly squeezed tangerine juice
  • 1 tsp of baking soda
  • 1/2 cup of raw pistachios
  • 1 1/2 cups of dried finely chopped figs
  • 2 cups of coconut milk full fat
  • 2 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 1 tsp star anise seeds
  • 1 tsp rum essential oil (optional)
  • 1 tsp tangerine essential oil (optional)


Topping ingredients

  • 1/2 cup of raw pistachios
  • 30 gr. raw dark chocolate
  • 3 TBSP of maple syrup
  • 3 TBSP of coconut oil


Directions

  1. Preheat the oven to 160°
  2. In a bowl mix together oats, pistachios, cinnamon, vanilla and star anise seeds
  3. In another bowl mix together the tangerine juice, coconut milk and baking soda. Wisk for a minute until the soda is well dissolved.
  4. Pour the liquid into the bowl with the dry ingredients, add the finely chopped figs and essential oils. Mix well and transfer to a pie dish
  5. Bake for around 30-40 min
  6. Grate the chocolate bar and on a low heat melt it in a double boiler.
  7. Add the coconut oil and maple syrup
  8. When about half of it is melted take it off the heat and mix well until everything has melted, be careful not to get any steam in/over the chocolate.
  9. Before you serve cover the oatmeal with pistachios and pour chocolate sauce on the top. Enjoy for breakfast, snack or dessert!
