Chocolate loaf cake with raw cacao nibs and fortified B12 cereal

The texture of this chocolate loaf cake is truly divine, it’s so soft, buttery and velvety, it’s incredibly moreish! All of this topped of with a dark chocolate glaze, crunchy cacao nibs and fortified cereal making this dessert extra, extra special.

I topped it off with this fortified cereal because of the B12 content. I know this is far from the amount required for a daily B12 intake but as I’m on a vegan diet I know how important it is to get some B12 where ever you can, and if it’s on cake then even better! I’m sure the people enjoying the cake with you won’t complain. Words are not enough to describe the taste of this chocolate loaf cake, you will just have to make it and blow your mind with how good it really is.

Sometimes I think about the selection of vegan desserts out there and wonder why a lot of them are so boring and tasteless. If you can make great, bold, plant-based recipes that taste better than the regular one’s why aren’t we..? I’m positive that if everyone is preparing really tasty vegan dishes then more people in general will be open to trying, enjoying and hopefully adopting this lifestyle.

Anyway there is not any thing specific involved in making this chocolate loaf cake, it’s simple and easy to prepare. Don’t be afraid to have ago late in the evening if you fancy it. I highly recommend the crunchy finish on top with cacao nibs and fortified B12 cereal. Please if you don’t have them then buy them first and then prepare it. You have to have the real feeling with the infusion between the soft buttery cake with the dark chocolate drizzle and crunchy finish.. It’s making my mouth water just writing about it..  Enjoy it !

Instructions
  1. Preheat the oven to 160°C
  2. Mix the ground flax seeds with half of the apple juice
  3. In a bowl mix together the white flour, oats, baking powder and coconut sugar. Add the coconut butter (melted), stir well and continue adding the almond extract, apple juice, ground flax seeds and dissolved baking soda in lemon juice.
  4. Stir until well incorporated and transfer into a baking tin. Bake for 30-35 minutes, or until dry wooden stick method.
  5. In the meantime melt the dark chocolate in a double boiler. Add the coconut butter and stir until well mixed. Cover the already baked cake with the chocolate topping and generously sprinkle over cacao nibs and the fortified cereal.
  6. Serve immediately or enjoy later at your leisure.
