Green salad with fresh figs
Instructions
  1. Pre-heat the oven to 160°C
  2. Line a baking tray and bake the diced sweet potatoes and diced shallots for 30 minutes
  3. In a bowl mix a handful of kale, a handful of spinach and a handful of rocket.
  4. Wash the pre-soaked walnuts, drain well, roughly chop them and add into the bowl with the greens
  5. In a cup mix all the spices, maple syrup, mustard, olive oil, lemon juice and balsamic vinegar. Stir until well mixed
  6. Add the baked sweet potatoes and shallots to the salad. Mix gently and divide them into 2 bowls. Decorate with fresh figs
  7. Serve with maple-balsamic dressing
