Lazy pea and sweet potato cream soup

How often are you not in the mood to rustle up something in the kitchen…. Or you just fancy having a light, warm and cozy veggie soup.. but you are too lazy to make it.. If you feel like this sometimes then give this soup a go. It’s not just quick and easy (as all of my soups are) it’s full of nutrients as well. If your on this blog then you most probably know sweet potato is a super food and that green peas are packed with veggie protein and fibres.

It’s a beautiful blend of flavours, suitable for vegans and non-vegans, a really awesome healthy nutrition bomb thats suitable for everyone. I’m cooking all of my soups from the blog (including this one) very often, we love them. I use them when I’m not in the mood to cook or I’m in a rush or just to tired or lazy.. It’s a light meal as well, a few reasons to give it a go.

Decorate with the soy cream, you don’t have to, you can replace it with a splash of plant-based milk if you like. Also if your a non-vegan drizzle some standard cream on the top, I’m sure it will be tasty as well.

Instructions
  1. In a saucepan put the oil and add the onions halved and sweat. After 5 minutes add then roughly chopped garlic and cook for a few more minutes.
  2. In the meantime peel and chop the sweet potato, add it to the saucepan and cover it with boiling water, pop the vegetable stock in as well. Leave it to simmer for around 15 minutes.
  3. Add the peas and simmer for 5 more minutes, or until everything is soft.
  4. Blend with a hand blender until creamy and smooth. Serve with a drizzle of vegan soy single cream, fresh herbs, spices, seeds, raw nuts or anything else you love. Enjoy!
