Matcha kiwi vegan ice cream with pistachios and goji berries

Another dairy free ice cream! This time I’m sharing my yummy vegan, full of super food yumminess (match powder and goji berries)!

Matcha is an excellent antioxidant with energising and relaxation properties. Matcha is a brilliant ingredient if your feeling stressed or nervous during the day and you need to relax. Or you might need an extra energy kick when its late in the day, and your energy levels are lower.

Goji berries have a high nutritional value, full of iron, fibres and vitamins. Goji berries are high in antioxidants as well, they are also great for keeping the skin looking younger and helping against daily skin damage.

Ideal and not just for vegans, its excellent for anyone on a healthy eating kick, its easy to digest and low in calories. Vegan cream contains 30% less fat in comparison to its dairy alternative, it’s also sugar-free, prepared with maple syrup. Maple syrup is a good source of nutrients too and its with a low GI.

Instructions
  1. In a high speed blender mix all the ingredients without the goji berries and pistachios for 10 seconds
  2. Add the last ingredients and stir by hand until well incorporated
  3. Freeze for 3-4 hours. For best results stir every hour to avoid crystals of ice setting in to it. Keep a lid on it all the time.
  4. Serve with extra goji berries, chopped pistachios and a sprinkle of matcha powder.
