Spaghetti with tomato sauce and spicy “meat balls”

This lovely vegan meal alternative to the standard spaghetti meat balls. Its so rich in herbs and spices that you will love it even if you are not vegan. The non vegan guests and vegans can enjoy this dish together. As I love to say it’s a vegan meal for non vegans. There are a lot of positives in our veggie pasta meal in comparison to the regular version.

  • Spaghetti with veggie “meat balls” is prepared with wholegrain pasta which is not very high in gluten and full of fibres. This makes the meal healthier, digestion friendly and a better choice for people on weight loss programs.
  • Our spaghetti with veggie “meatballs” are prepared with freshly cooked spicy tomato sauce, full of nutritional seasonings and free from colourants, sugars and preservatives. It also take no time to prepare.
  • The veggie “meat balls” are black bean based, rich in fibres and plant-based protein, they are really, really rich in nutrients from all the vegetables and spices in them. Fibres help your digestive system to work better, they are much lower in calories in comparison to the regular one which is full of fats .

The meal is an excellent choice for kids, it’s a great source of varied nutrients and the taste will keep them coming back for more. It’s a beautiful choice for everyone else who wants to be healthy and energised or for those who would love to get rid of some fats and try the clean eating lifestyle.

Instructions
  1. Start with the veggie "meat balls" Preheat the oven to 160°.
  2. In a bowl mash the drained and washed beans. Grate the courgette, finely chop the onion and then add them into the bowl. Add all the herbs, spices, oats and flaxseeds then mix well.
  3. Form 9-12 veggie "meat balls". Line a baking tray and lightly brush with oil of choice (I use avocado) and bake for 20-30 minutes.
  4. Continue with the spicy tomato sauce In a saucepan on a low heat put the oil. Add the chopped onion and cook for 5 minutes. Add the chopped garlic and continue cooking for a further 5 minutes. Continue adding the tomatoes, all spices and herbs except the basil. Add a half to one cup of boiled water and cook for 20 minutes, covered on a medium heat.
  5. Blend the sauce with a hand blender. Add the finely chopped basil to the sauce.
  6. In the meantime cook and drain the pasta, should take around 10 minutes.
  7. Put the wholegrain spaghetti into the freshly cooked spicy tomato sauce. Stir well.
  8. Serve with 2-3 veggie "meat balls" and fresh herbs of choice.
