This is a really yummy spring meal with polenta chips that’s low calories. Summer is coming and we have to look our best. Let’s start by consuming light meals that are low in calories, but that don’t compromise on taste and flavour.
I was inspired by a recipe from ” hello fresh “, over time I have converted it into a plant-based recipe and excluded the ingredients that were not suitable for vegans. I now present a dairy-free version of this meal.
The addition of mint makes the meal absolutely fresh and aromatic, the chilli adds an extra tasty and bespoke flavour. Polenta chips are my creation as I really like the crispy texture of it and its up there with my family favourites!
