Spicy mint courgette bake with crispy polenta chips

This is a really yummy spring meal with polenta chips that’s low calories. Summer is coming and we have to look our best. Let’s start by consuming light meals that are low in calories, but that don’t compromise on taste and flavour.

I was inspired by a recipe from ” hello fresh “, over time I have converted it into a plant-based recipe and excluded the ingredients that were not suitable for vegans. I now present  a dairy-free version of this meal.

The addition of mint makes the meal absolutely fresh and aromatic, the chilli adds an extra tasty and bespoke flavour. Polenta chips are my creation as I really like the crispy texture of it and its up there with my family favourites!

Instructions
  1. Pre heat the oven to 160°C
  2. In a bowl grate the courgette and sprinkle the salt. Leave it for 10 minutes to drain out in a colander
  3. In the meantime chop the mint, onion and add the chilli
  4. In another bowl chop the potatoes and add the oil, salt, oregano, chilli and polenta. Mix well
  5. Prepare a loaf tin and a lined baking tray for the chips. Lightly brush with oil
  6. Mix the drained courgettes with the onion, spices, add the flour into the bowl and mix until well incorporated
  7. Transfer into the loaf tin and bake for 30 minutes or until goldenish on top
  8. Transfer the potatoes onto the baking tray and bake for 30 minutes or until golden
