Superfood energy granola bars
Crunchy superfood energy bars with cacao nibs, goji berries, nuts and cranberries

  1. In a food processor blend the nuts for 30 seconds, add the dates, vanilla and cinnamon, blend for 30 seconds more or until well mixed.
  2. Finally add the goji berries and cranberries for an additional 30 seconds. Leave some rough chunks in the mixture, you don’t want it to be too smooth.
  3. When the mixture is ready add the cacao nibs and mix it well by hand. It might seem a bit crumbly but it is sticky enough that when you squeeze it together it will stay together.
  4. In a baking tray or pie dish line the bottom with cling film, long enough to be able to fold back over the top.
  5. Transfer the mixture for the energy bars into the dish and press it down by hand to form a nice even layer, fold the cling film over the top and then you can press down harder, feel free to use a piece of wood or glass to get it flatter and more compacted. This will ensure the bars become well stuck and don’t fall apart later.
  6. Refrigerate for a few hours until they firm up. When ready top them with some cranberries, goji berries, nibs and some additional chopped nuts for an even more tempting look.
  7. Finally enjoy!
