This really is an easy recipe for a delicious vegan cream cheese. The taste is incredible and better than that, you can eat as much as you like. It’s full of protein, fibres and loads of vitamins and minerals. Myself, my husband and little boy easily manage to eat this whole portion in one evening.

This vegan sour spread is ideal to dunk your chips in, sweet potato or baked veggies, you can use it in any combination you desire, it goes well with almost everything. Your cans make this vegan cream cheese and store it in the fridge for up to 1 week, then enjoy it on toast in the morning or as an afternoon snack. You might even like to make some sour vegan pancakes over the weekend and have a side of cream “cheese” to go along with it. I could go on with these combinations, I love sweet and sour flavours… mouth-watering!

When I first decided to become vegan I was wondering what you can eat. I thought that the food choices were very limited.. now I know how varied and wide the palette of vegan food really is. I managed to convert my favourite dairy recipes in to plant-based versions. My stomach feels a lot better not having to digest all the dairy and now my food is full of nutrients and really yummy, even non-vegans can really enjoy them and come to love them as they originals. I’ve seen it with my own eyes..

I did an experiment and gave this vegan cream “cheese” to non vegans… and guess what they didn’t know the difference  and really enjoyed it. I think you need to get a good balance between the lemon, herbs and salt, so feel free to adjust it to your personal taste. Lemon brings in the fermented notes, herbs makes it aromatic and tasty and salt gives the usual cheesy sour flavour as the standard one.

Instructions
  1. Drain the cashews, wash them and put them into the food processor
  2. Roughly chop all herbs, add the lemon juice, zest, salt and garlic powder. Pulse until completely smooth
  3. Serve with smoked chilli flakes, fresh finely chopped parsley, chives and spring onion.
