Vegan pizza, gluten-free with spicy beet “salami” pineapple and macadamia “parmesan”

Pizza has to be one of the worlds favourite foods, it’s also one of the unhealthiest. Nowadays we can still enjoy this deliciousness in a new healthy version without feeling guilty after eating it. Vegan pizza can be really yummy. The difference between the healthy vegan pizza and the regular one is the vegan pizza is full of nutrients and is digestion friendly. Also vegan pizza is much lower in calories compared with the regular pizza.

The veggie pizza in this recipe has a beautiful combination between  sweet and sour flavours. The spicy beetroot “salami” is going to be your new favourite pizza topping. Its delicious and aromatic. Beetroot is a veggie with  high nutritional value, cleaning properties and many other health benefits.

Pineapple is a well know pizza topper so I’ll say use this amazing fruit on the pizza  to add a nice sweet note. It works very well with the other flavours on this pizza.

Raw macadamia nuts are relatively low in carbs and contain good fats and fatty acids, important for a good digestive process and general health. This combination between these veggies in our pizza are perfectly suited and the result is a yummy, delicious infusion. Allowing you to enjoy really good quality, high value food. Instructions
  1. Pre heat the oven to 160°C
  2. Line 2 trays with parchment paper and dust with flour
  3. In a cup mix the yoghurt with the baking soda
  4. In a bowl mix the water, oil and yoghurt mixture. Add the coconut sugar and the salt.
  5. Little by little add the flour and stir with wooden stirrer. You have to reach a soft non sticky dough
  6. By hand or with a rolling pin roll out 2 pizza bases. Place them on the baking trays and cover with the homemade ketchup (see link)
  7. In another bowl mix the sliced beetroot with the cumin, black pepper, smoke paprika and chilli. Mix until the slices are covered with spices, then place them on the pizza base
  8. Continue with the toppings, peas, sweetcorn, onion, cherry toms.
  9. Bake for 20 minutes, or until crisp on the edges
  10. Serve with fresh watercress, chive or other herbs and finely grated macadamia for the healthy vegan parmesan. See the links above for the mayo and pesto!
