Vegan pizza with fresh figs | gluten free base, spicy “pepperoni” “parmesan”

As most people I really love pizza, but what I don’t like is the heavy feeling I get afterwards in my stomach. Also the thought of the huge amount of calories I’ve consumed and the combination of difficult to digest ingredients. The large amount of different ingredients makes it difficult for the digestion system to work effectively and as a result toxins are collected and carbs are stored in the body as fats.

I created this vegan pizza because I love the fresh fruits and vegetables, I really enjoy getting the nutrients and energy from them and also just because I love pizza! The difference a standard pizza and a good vegan one is that you will take loads of health benefits from the vegan pizza along with an amazing flavour and taste.

The list of health benefits is too long for this plant-based pizza and I don’t want to bore you so I’ll just cover a few. This vegan pizza is gluten-free and full of fibres. Fibres are great for the digestion system when they are consumed with fresh fruits and veggies. Raw macadamia nuts will give you a great tasty feeling along with energy and a load of nutrients. Also omega fatty acids and good fats, these aren’t found in  normal dairy cheese.

Beetroot or in this case vegan “pepperoni” is one of my best creations until now. It’s so amazing and delicious you can almost fool a meat lover that it’s real pepperoni.

Importantly don’t expect the texture and flavour of this vegan pizza to taste like the standard one, you will be disappointed if you do. I’ll guarantee it has an amazing unique yummy taste and high in nutritional value.

Instructions
  1. Pre heat the oven to 160°C
  2. Line and dust 2 baking trays with parchment paper
  3. In a bowl put the flour and add the oil
  4. In a separate cup mix the baking soda with the plant-based yoghurt and add it to the bowl with the flour
  5. Gradually pour the water into the flour and stir all the time until you reach a rich dough mixture
  6. Then by hand make soft, non-sticky dough
  7. Divide it into 2 pieces and by hand or rolling pin make 2 pizza bases
  8. Cover it with the home made ketchup followed by the sweetcorn, spicy "pepperoni", courgette, cherry toms, and red onion
  9. Bake for 15 minutes
  10. Serve with quartered fresh figs, spinach and rocket
  11. Grate some macadamia nuts for the top for the vegan "parmesan" You can also have a side of vegan mayo or home made pesto see the links above
